Spoons in millilitres
US spoons: 1 tsp = 4.93 ml, 1 tbsp = 14.79 ml. Metric recipes round these to 5 ml and 15 ml, which is close enough for cooking. The exception is Australia, where a tablespoon is 20 ml — four teaspoons. For baking powder or salt in an Australian recipe, use a US tablespoon plus one teaspoon.
Measure dry ingredients level, not heaped: a heaped teaspoon of baking soda can be twice the intended amount.
